I feel like I've been doing a ton of cooking lately.  We are eating at home almost every meal now a days, Brad has been taking his lunch to work, Lillie eats normal food and I'm always hunger... so you can find me in the kitchen if you need me.

I'm kind of over frozen food and not because I don't like it.  It is just every time I look at the sodium content on a box it makes me a little uneasy.  But, the truth of the matter is that we need some easy options to tide us over on nights that we have to get dinner done quickly.  And that means, we need something out of the freezer!  So I tried these burritos (suggested by Meg W!)...  and Brad seems to be into them.  They just need salsa to keep from being so dry.  Recipe makes 20 to 25 frozen burritos that can go from freezer to dinner in less than 2 minutes.  Beat that Cosmic!

Instead of making 20 to 25 freezer burritos like the recipe suggested- we had enchiladas for dinner and just added chicken, cheese and enchilada sauce to make the meal complete.  It worked out well because I had one big mess in my kitchen, 4 enchiladas for dinner and 10 frozen burritos for the days to come!  Success!


This weekend I made this EASY recipe from a co-worker for an awesome Key Lime pie.  I know, I know- it looks store bought- but really, I made it in about 5 minutes.   In Lisa's words...

Key Lime Pie
3/4 to 1 cup Lime Juice
6 egg yokes
2 cans of sweetened condensed milk
1 graham cracker crust

Preheat over to 350
Stir everything together
Blend the crap out of it + 15 seconds
Pour into pie shell and bake for 10 minutes
Let cool to room temperature
Cover + refrigerate until cold.


And last, but certainly not least, zucchini bread.  This recipe is from Cham's sister, Helen.  It is amazing.  Truly, amazing and I make it often.  And these cute 4 little loaf pans I got for my birthday this year and I adore them- they make the perfect size for giving away.  Thanks K & K.

Zucchini Bread
3 eggs beaten
1 cup oil
2 cups sugar
2 cups grated zucchini
1 tsp. vanilla
3 cups flour
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda

Mix wet ingredients
Mix dry ingredients
Stir dry into wet.
bake 350 for about an hour +
(too much dough for just one big loaf pan)
